A tradition that is always alive,: to stay together with my family and cook: adults and children knead, shape cookies and sweets to share at Christmas. In the kitchen, the atmosphere is warm and we have the occasion to meet each other, to listen to music, to sing Christmas songs, to talk and stay in silence and get in touch with the real Christmas atmosphere. Today I share with you a traditional family recipe: black and white cookies that I have slightly revised, using a type “1” flour, ghee instead of butter and brown cane sugar. Here it is….without eggs and sugar free 🙂 I know that somebody will say: “Sweets must be made as they should be: with eggs, butter, sugar and so on”. I often agree with this kind of vision, but in many cases, I can surely show you that it is possible to enjoy a sweet, made only of light ingredients.
Now I’m going to tell you how this recipe was born: during this autumn, looking at a marvelous persimmon tree with its colored fruits, I was wondering how to use them. One friend of mine told me that she had frozen some, but she didn’t know how to use them. So I told her to prepare some smoothies with milk or yogurt. Then, one day, I had some fresh ricotta in the fridge, and some frozen persimmons and I had this idea: to blend them with rice drink and concentrate apple juice. How was it? A great experience, absolutely to prove! A smoothe creamy mousse to enrich with crumbled amarretti and minced dark chocolate.
Christmas is coming and there is a memory in my mind, so clear and pleasant: when I was a child, during this period of the year, my mother and my grandmother, used to prepare a lot of cookies to give as present to friends and relatives…since I have a family, I keep alive this tradition preparing cookies with my children and it’s a very nice experience for everybody.

I have a beautiful memory of when I was a little girl and me and my family went to the mountains for the winter holidays; on the way back, we always used to stop in a small place in Trentino, and in particular in a pastry bakery. It was like a ritual: my mother always bought some apple strudel and, for her little girl, the carrot cake … I was delighted, because is one of those desserts I prefere. Today, also my daughter likes it very much and I use to prepare it in a sugar-free variant. In this recipe I’m sharing with you, I’ve used hazelnuts instead of almonds and added fresh ginger. Furthermore you’ll see it in a muffin version … nice aren’t they? 😉
