This dessert is a combination of two simply and tasty recipes: the persimmon mousse and the chocolate vegan mousse. These two preparations, enriched with caramelised pistachio nuts, give you the possibility to end in beauty and taste, an important lunch or dinner, or to complete an elegant buffet. Today I share with you also the vegan version.
Another sweet recipe to reuse scraps of a juice extractor … Last week we saw the possibility to prepare a homemade oat drink. Today we are going to find out together how to reuse oat scraps, cooking these excellent vegan cookies … I’m sure, you will be amazed to discover how good they are ☺
Still a nice recipe with the use of gluten free flours…a sweet one. It’s time for these friable cookies with buckwheat and almond flour. I know that almond flour is quite expensive; you can buy almonds and blend them finely with a mixer and get the right amount you need at a lower cost.
I’ve met pancakes for the first time during a study holiday in England, many years ago ☺ Since then they have become a very special way to start a day.
Pancakes represent in our family a really “Special” breakfast. Generally, I prepare them with my children, on Sunday mornings, when there’s no school and the awakening is more gradual …. This is a vegan version, accompanied by the first strawberries of the season and some mint leaves. I will certainly publish many other variations … Meanwhile try this and tell me if you like 😉
You need a light recipe to create a smoothe and sweet mousse for dessert? Here it is….without eggs and sugar free 🙂 I know that somebody will say: “Sweets must be made as they should be: with eggs, butter, sugar and so on”. I often agree with this kind of vision, but in many cases, I can surely show you that it is possible to enjoy a sweet, made only of light ingredients.
Now I’m going to tell you how this recipe was born: during this autumn, looking at a marvelous persimmon tree with its colored fruits, I was wondering how to use them. One friend of mine told me that she had frozen some, but she didn’t know how to use them. So I told her to prepare some smoothies with milk or yogurt. Then, one day, I had some fresh ricotta in the fridge, and some frozen persimmons and I had this idea: to blend them with rice drink and concentrate apple juice. How was it? A great experience, absolutely to prove! A smoothe creamy mousse to enrich with crumbled amarretti and minced dark chocolate.
Christmas is coming and there is a memory in my mind, so clear and pleasant: when I was a child, during this period of the year, my mother and my grandmother, used to prepare a lot of cookies to give as present to friends and relatives…since I have a family, I keep alive this tradition preparing cookies with my children and it’s a very nice experience for everybody.
One cookie leads to another, so for this recipe, I’ve decided to use only light ingredients so you will be free to eat one more 😉
Some monthes ago I was practising in a cooking class and the Chef told us how important is to stop each days and cook for at least half an hour to prepare a good balanced plate for us or our friends and family. This is the best condition we can try to recreate every day; unfortunately, it is not always an achievable goal. So, today, I share with you a quick and light recipe to use on one of those days, when you do not have time to stay in the kitchen, but you have no desire to eat a simply sandwich 😉 A beautiful colorful smoothie you can prepare in a few minutes and enjoy in your short break.
I have a beautiful memory of when I was a little girl and me and my family went to the mountains for the winter holidays; on the way back, we always used to stop in a small place in Trentino, and in particular in a pastry bakery. It was like a ritual: my mother always bought some apple strudel and, for her little girl, the carrot cake … I was delighted, because is one of those desserts I prefere. Today, also my daughter likes it very much and I use to prepare it in a sugar-free variant. In this recipe I’m sharing with you, I’ve used hazelnuts instead of almonds and added fresh ginger. Furthermore you’ll see it in a muffin version … nice aren’t they? 😉
Summer is coming and we start to enjoy the first fruits of this season; the great heat, unfortunately, sometimes forces us to consume them in a hurry so they do not risk to become too much mature with no longer pleasant to enjoy fresh. To avoid this we can do different things like jams or tarts, for example. Sometimes we can use the freezer: in fact, with frozen fruits we can prepare tasty smoothies or excellent sorbet like this! The recipe I propose today is possible to do with a few ingredients and with the help of a simple mixer.
I use to prepare juices with fruits and vegetables, and every time I ask myself how to reuse the fibrous parts of carrots, beetroots, apples etc. I really love “recycle”… also when I find something old and used, I feel excited when it comes a good idea to use it another time. The same is in the kitchen: all the time I have to discard something for some preparations I think about different ways to “reuse”; it is also a nice exercise to stay in the field of possibilities and be creative in front of a question: “What can I do with this?”.
I don’t have animals or chickens wich would be very satisfied from these food scraps, so I share with you this wonderful idea: just adding some simple ingredients you will cook a vegan and sugar free carrot and beetroot cake… really tasty 😉
