How to make different, the usual vegetables…With a little bit of creativity we can make a tasty, colored cream to replace a classic “pinzimonio”. With few ingredients a simply and fast recipe with the scent of mint leaves and lemon, flavoured with salted capers from La Nicchia di Pantelleria.


  • 1 barbabietola rossa media
  • 10 capperi di Pantelleria sotto sale
  • 1 cucchiaino di tahina
  • 6 foglioline di menta
  • 20 gr di olio extravergine di oliva
  • succo di 1 limone
  • 2 cucchiai di tofu vellutato
  • 1 cucchiaio di succo d’agave



  1. Cut the beetroot into thin slices and steamed it for about 10 minutes.
  2. Blend the beetroot and all the other ingredients to obtain a smoothe cream: serve it with raw, fresh and seasonal vegetables.
