  • colored chard sticks
  • some mint fresh leaves

for the emulsion:

  • 1 orange (only juice)
  • extra virgin olive oil q.s.
  • 1 coffee spoon of mustard
  • salt q.s.
  • pepper q.s.
  • 1 pinch of red chilli powder



  1. Cut the chard sticks and cook them in abundant boiling water for 2/3 minutes; cool immediately in a bowl with water and ice.
  2. Prepare the emulsion mixing all the ingredients in an airtight jar; shake it for a few seconds to get a spicy sauce.
  3. Season the sticks and serve with some mint leaves.
