VEGAN SPICY COOKIES

Christmas is coming and there is a memory in my mind, so clear and pleasant: when I was a child, during this period of the year, my mother and my grandmother, used to prepare a lot of cookies to give as present to friends and relatives…since I have a family, I keep alive this tradition preparing cookies with my children and it’s a very nice experience for everybody.

One cookie leads to another, so for this recipe, I’ve decided to use only light ingredients so you will be free to eat one more 😉

SWEET POTATOES AND BROCCOLI CREAM

When I cook, I generally give a big importance to the quality of food, but also to the combinations of colors in the plate; I’ve always thought that a beautiful dish will be easier to digest. About colors, I think that nature helps always: If we observe with attention, we’ll find out that in every moment of the year, there are many different colors in a vegetable garden, and if we try to create a plate how it was a painting, putting attention on colors combination, the taste will surprise us in a positive way….It’s like if the harmony of colors was in strictly relation with the harmony of flavours.

This colored cream can be a nice proposal for an appetizer, or a light autumn dinner.

Falafel with yogurt sauce

I love travelling: it always makes me meet different cultures, visit places caracterized from different colours and perfumes. Travelling, open my mind and makes me embrace new life styles and point of views. Every time I feel a very important personal enrichment. In addition I can eat different food. I also live the possibility to join ingredients and cooking styles to create a nice dialog between cultures…..it’s wonderful! In this recipe I make one version of falafel, that is a typical plate of Middle East Countries: these legumes fried balls are delicious with a fresh yogurt sauce.

Flans are always very elegant and attractive; they can be a nice appetizer or a light side dish, especially if you mix classical ingredients (like eggs and cheese) with some lighter ones; in this case I’ve used soy cream instead of fresh cream. Flans can be served in different kind of ways: here is a delicious version with a velvet carrot and curcuma cream.
